One-Pot Penne Pasta

Anyone else needing some comfort food on these dreary days we’ve been having? As much as I know we need the rain, it still puts me in a bummer of a mood some days. And what better way to feel better than to cook and eat something delicious? But to keep things real…in the words of our favorite “shrink” from FRIENDS, Roger…”Remember, they’re just food; they’re not love.” But I personally think it’s ok to love your food…as long as it’s the healthy stuff! And that’s one reason why I’m here – to show you all that healthy food doesn’t have to taste like cardboard. That is actually tastes better than the processed junk.

Cheesy Zucchini Sticks

I just love how Pinterest is littered with “kid friendly” recipes that say things like, “I arranged these fruits and veggies in a funny face and my picky eater gobbled them right up”, or “These zucchini tots look and taste just like tater tots…try them on your picky toddler!” What about “mini meat loafs? or candied baby carrots..?” LIES. These are ALLLLLLLL lies.
